Notes - The Trimbach family has been involved in making wine since 1626 and has, over thirteen generations, built an enviable reputation for the quality of its entire range. From the Pinot Blanc through to the iconic Clos Sainte Hune Riesling, the wines are considered the benchmark for quality, consistency and style. The essence of Trimbach, with the obvious exception of the luscious dessert wines, is the traditional dry style in which the wines are made. Pinot Noir is the only Alsatian red wine. In Alsace, Pinot Noir needs the longest and warmest summers to reach optimum maturity and as a consequence Trimbach only vinifies this wine in exceptional years. The grapes are crushed and destemmed followed by temperature controlled fermentation in stainless steel. The wine is not oaked in order to preserve fruit purity and freshness. Bottling takes place in the spring following the harvest. The wine is light and herby on the palate with vibrant strawberry and cherry flavours. Round and structured, the more intense, vegetal characters will develop with bottle age in place of the primary red fruit flavours. The wine is medium bodied and has perfect, soft tannin. A classic expression of Alsace Pinot noir, traditionally served chilled and is an excellent companion to charcuterie, smoked meats as well as duck and soft cheeses.
