Doorlys 3 year old White Rum is a Barbadian white rum distilled and blended at the world famous Foursquare Distillery in Barbados. It is a Single Blended Rum matured in ex-bourbon cask American white oak which is then carbon filtered to remove the majority of colour leaving a delicate pale gold.
The Foursquare Distillery, which is owned by the Seale family, occupies the site of a former sugar factory that dates back to 1636 and, as one of the most modern (it was opened in 1996) and efficient rum distilleries in the world, is designed to be both highly energy efficient and environmentally friendly. Martin Doorly & Co was one of the old Bridgetown rum bottling companies (founded in the 1920s) and the Doorly’s Rum brand was acquired by R L Seale in 1993. R L Seale is one of Barbados’ oldest trading houses, a family-owned business whose involvement in rum-making extends from father-to-son since 1820. Current head distiller, Richard Seale, is one of the region’s most innovative distillers and blenders and has a passion for producing perfect rum with great flavour.
Doorlys 3 Year Old White Rum is a blend of rums made from distilled fermented molasses and aged for at least three years in oak barrels, it then has any colour removed using a 3 step charcoal filtration process. This leaves behind a clear white rum with some creamy oak aged characteristics. Use of older
casks minimises the extracted colour, so reduces the filtration requirement. Bottled at 40% ABV.
Like the other rums in the Doorlys Macaw Range of rums this one features a Macaw, in the case the Blue and Yellow Macaw, Ara ararauna, a fairly common and widely distributed parrot, unlike the rare Spix’s Macaw which one can find on the Doorlys 12 Year Old Rum.
There is also a 47% bottling.
Nose: Bright fresh citrus peel notes of orange, lemon, and lime. Underripe pineapple, green apple, and vanilla. Gentle sugarcane notes intertwine.
Palate: Soft and sweet onto the palate. Delicate golden syrup and gentle vanilla notes. Hints of lemon peel.
Finish: A green, vegetal embrace. Dry, lasting, with delicate hints of cardamom pods, and caraway seeds.
