Champagne Forget-Brimont Rosé de Saignée Extra Brut is a bold and characterful dry Rosé Champagne made entirely from Premier and Grand Cru Pinot Noir using the “saignée” method.

It displays beautiful depth with fresh aromas of macerated red fruits, ripe black cherry and blackcurrant. On the palate, it is precise and vibrant, delivering juicy red-berry flavour, a fine mineral edge, and a crisp, dry finish that lingers beautifully. Wonderfully refreshing and stylish.

Champagne Forget-Brimont Rosé de Saignée Extra Brut Vinification

  • Pinot Noir grapes are hand-harvested at the perfect moment of ripeness to capture maximum flavour and phenolic complexity.
  • After a gentle destemming, the grapes undergo several hours of cool maceration, naturally extracting colour and aroma straight from the whole berries.
  • When the desired pink hue is achieved, the tank is “bled”. Only the free-run juice is drawn off, leaving the skins behind for a pure and elegant expression.
  • Alcoholic fermentation is carefully controlled at 17–20°C, followed by full malolactic fermentation in stainless steel tanks.
  • The wine then completes its secondary fermentation in the bottle, deep in the estate’s cool cellars 15 metres underground at a steady 11°C; perfect conditions for developing the wine’s fine, persistent bubbles.
  • Aged for 5 years in the cellars before release.
  • Dosage is 6 g/L

A Family-Owned Champagne House

Champagne Forget-Brimont is a small Champagne producer located in Craon de Ludes. 6th Generation Champenoise Michel Forget is the co-owner and winemaker. The estate can trace its origins back to the early 19th century when Michel’s ancestor, Louis, first planted vineyards in the area. The Champagne Forget-Brimont brand was officially established in 1920 by another relative, Eugène. In 2000, Michel partnered with Frédéric Jorez to ensure the continuation of Forget-Brimont as an independent Champagne House.

A Négociant Manipulant Producer

The company owns 19 hectares of vineyards in the Montagne de Reims with Grand Cru vineyards at Mailly-Champagne, Verzenay and Verzy, and Premier Cru vineyards at Chigny-Les-Roses, Ludes, Montbré, Sermiers, Taissy and Villers-Allerand. Pinot Noir is their most planted grape variety. Although Champagne Forget-Brimont owns vineyards, it also buys grapes from other local growers. They are therefore classified as a Négociant Manipulant (NM) producer.

Perfect Cellaring Conditions

Champagne Forget-Brimont’s Cellars are dug out of the chalky soils (that Champagne is famous for) to a depth of 15 metres. This means that the cellars are at a constant temperature of 11°C in both summer and winter, the optimum ageing conditions for Champagne, creating fine bubbles and incomparable perlage.

 

Tasting Notes

Appearance: A beautiful, brilliant ruby-pink with lively, fine and persistent bubbles.

Aroma: An expressive and generous nose. The bouquet bursts with macerated red fruits, including ripe raspberry and juicy Morello cherry, which are joined by tempting notes of blackcurrant and blackberry.

Palate: Rich and rounded, it opens with a vibrant, lively attack and a creamy stream of fine bubbles. Succulent red fruit flavours fill the mouth, delivering a delightful, indulgent rush of raspberry, cherry and wild berries.

The Pinot Noir gives a refined, gentle tannic structure that brings balance and depth, while subtle hints of ripe plum add extra layers of complexity. Fresh, intense and wonderfully moreish with a crisp and clean finish.

Food Pairing

Champagne Forget-Brimont Rosé de Saignée Extra Brut pairs beautifully with smoked salmon, grilled prawns, duck breast with cherry sauce, and creamy cheeses like Brie or goat’s cheese.

The crisp, dry finish and red berry character also make it a wonderful match for charcuterie boards, sushi, or light berry-based desserts.

What Is Champagne Rosé de Saignée?

Most Rosé Champagne is made by simply blending a small amount of still red wine into white Champagne (a method called Rosé d’Assemblage).

Rosé de Saignée is a much rarer and more demanding technique. The name “Saignée” translates from the French to “bleeding,” and refers to how the juice is “bled” off the grape skins.

A Question of Timing

In a blended Rosé, the colour is easy to control by adding more or less red wine. In a Saignée, the winemaker must monitor the vat constantly; a few hours too long and the wine becomes too dark or too tannic.

Key Characteristics of Rosé de Saignée

Because of this intensive skin contact, Saignée Champagnes often differ significantly from blended Rosés:

  • Deeper Colour: They usually range from a vibrant, deep pink to a light garnet, whereas blended Rosés are often pale salmon.

  • Intense Aromas: Expect “vinous” (wine-like) qualities—think macerated strawberries, raspberries, and even darker fruits like black cherry.

  • More Structure: The brief contact with skins extracts a small amount of tannin, giving the wine more “grip” and body on the palate.

  • Food Friendly: Because they are bolder and more powerful, they pair exceptionally well with savoury dishes like duck, venison or earthy mushroom risottos.
