Pastis 51 is one of the best selling Pastis brands in France. This is anise flavoured spirit is produced in Marseille in the south of France. It is owned by French drinks company, Pernod Ricard.
Pastis 51 was created 1951 by Pernod when the ban on anise-based aperitifs was lifted, this classic soon became a leading brand in France. This version of pastis (from pastisser or ‘to mix’ in Provençal French) contains Chinese star anise, aromatic Provençal plants, fennel, oriental liquorice and African kola nut to offer a light and refreshing taste of the Mediterranean.
When it was first introduced, Pastis 51 quickly became popular in France and beyond, with its distinctive flavor and refreshing qualities making it a favorite among those who enjoy an aperitif before a meal. Over the years, the brand has continued to evolve, with new flavors and packaging options being introduced to keep up with changing tastes and trends. This Pastis is made by macerating the botanicals in a neutral alcohol (96% ABV). There follows a double distillation to extract and condense the natural essences from the macerate. The spirit is then let down to 45% ABV with purified water.
Pastis 51 has a pale yellow color that turns cloudy when water is added. The aroma is dominated by the sweet and herbal scent of anise, with subtle notes of licorice and fennel. The flavor of Pastis 51 is complex, with a blend of sweet and herbal notes. The anise flavour is prominent, but there are also hints of liquorice, fennel, and other herbs.
