Benefiting from low rainfall, long sunshine hours and free-draining soils, the Crouch Valley consistently produces grapes with excellent ripeness and concentration. The Bacchus fruit selected for this wine displayed remarkable aromatic intensity, making it worthy of being vinified separately as a premium single-block bottling.

Lyme Bay Bacchus Block Winemaking

  • 100% Bacchus sourced from two blocks of vines in the Crouch Valley.
  • Both parcels were gently crushed before being macerated on the skins for 6 hours – an extended maceration to extract greater pungency, texture, and weight
  • Fermented using thiol-enhancing yeast strains to develop the grape’s natural aromatic intensity
  • Aged on fine lees for added complexity and mouthfeel
  • A portion aged in ex-white Bordeaux barrels to add depth, richness, and a further layer of complexity
  • The two parcels were blended before bottling to produce the final wine

A beautiful, balanced wine with excellent structure including tropical fruit, blackcurrant leaf and a smooth mouthfeel. Steely lime acidity continues into a finish that just keeps on going
