Abelha Organic Cachaca Silver is produced in the highlands of Bahia, Brazil from organic, locally grown sugar cane.

Abelha is a single estate, family-owned Cachaca producer. The estate is located in Rio De Contas – a small town set amongst the hills and valleys on the edge of the majestic Chapada Diamantina – where they met Marcos Vaccaro, a visionary and an expert in all things organic. At 1,200 metres altitude, the estate is ideal for Cachaça production, as the temperature differential between day and night produces sugar cane that retains its natural sugars. Marcos coordinates all production, from cane field to pot still, and is constantly seeking out ways to improve their our organic farming and distillation methods.

Abelha Organic Cachaca Silver is a premium hand-crafted white cachaça which is ‘rested’ (descansada). Resting the Cachaça for a few months in open steel tanks allows some of the less desirable compounds to evaporate or oxidise into phenols, which give the cachaça its characteristic bouquet. It is then cut with water from deep natural aquifer under the farm which has the perfect pH acidity and is totally unpolluted. The result is a naturally full-flavoured, well-balanced Cachaca.
