Calvados Lemorton 15 Year Old is a blend with an age of at least 15 years old from the Domfrontais region of Normandy. In the Domfront region of Calvados at least 30% of the cider / perry to be distilled into Calvados, by law, must come from pears. This produces a lighter, pear-dominated style of Calvados

The Lemorton family has a long history in Calvados, it is currently run by the third generation, Didier Lemorton, and his wife Martine, who followed on from his grandfather Isidore and father Roger. The estate is located at Mantilly and they specialise in producing older Calvados from the Domfrontais region. The farm is planted with both pear trees and of apple trees with more than about forty different varieties. These are “high stem”, low density plantings which encourage biodiversity on the estate.  As well as Calvados, the estate produces cider, perry and Pommeau de Normandie.

The southern appellation of Calvados Domfront (which was granted its AC in 1997) has clay and limestone soil much more suited to pear trees than the northern part of Calvados, which is more suited to the shallow roots of apple trees. In Domfront it is mandatory that at least 30% of the cider / perry to be distilled into Calvados must come from pears. At Calvados Lemorton the proportion of pear in the Calvados is around 70%. This leads to a slightly lighter coloured spirit which is more delicate, elegant and feminine in style than those of the northern ACs (Pays D’Auge).

The Lemorton’s distill their cider after aging it for eleven months in oak barrels. Distillation takes place in their own alembic still, a single-distillation unit that distils to about 140 proof. The clear spirit then goes into barrels for ageing for many years prior to bottling.
