The West Winds Gin The Sabre is a small batch distilled Australian gin made in batchs of 350 bottles at a time in a copper pot still. The Sabre Gin an Australian wheat-based spirit bottled at 40% ABV and is made using a different set of botanicals to its big brother, The Cutlass, which is bottled at 50%. The West Winds Gin company was founded in Melbourne in 2010 by four Australians Jason Chan, Paul White, Jeremy Spencer and James Clark who all shared the vsion of creating a “damn fine”, uniquely Australian gin. The first gin was released by The Tailor Made Spirits Company in 2011. The range initially consisted of two gins, The Sabre and The Cutlass. These have been joined by a third gin, The Broadside Navy Strength bottled at 58% ABV. The West Winds Gin The Sabre is made from a selection of 12 different imported and native Australian botanicals. Included in the herbs and spices used, as well as the juniper, lemon and coriander, is lemon myrtle, lime peel and wattle seed. The West Winds describe this as a gin lover’s gin with a strong undercurrent of citrus. The toasted wattle seed adds a depth to the mid-palate and introduces a creamy texture to the palate. Lemon Myrtle adds lemon and lime fragrances to complement the citrus botanicals. The lemons and limes used are sourced from farms in Gingin, Western Australia and the water used is sourced from Margaret River.
