Williams Elegant 48 Gin  is an English Gin made in Herefordshire at the Chase Distillery. Unlike Chase Vodka, which is made from potatoes, Williams Chase Elegant Gin is made with an apple base. Organically grown apples from Chase’s own farm are crushed and the juice is fermented to make cider, it is this cider that is then distilled in same way as their potato vodka using the same stripping still and rectifier. At this stage Chase dilute the apple spirit with the farm’s own purified well water and some of it is bottled as Naked Chase Vodka.

To make Williams Elegant 48 Gin  the apple spirit, diluted to 45% abv, is distilled and the vapours passed through the the botanicals sitting in vapour botanical chamber prior to the vapours reaching the condenser. The resultant gin is again diluted down with purified well water and bottled at 48% abv. There are 11 main botanicals used in the manufacture of Williams Elegant Gin – juniper, coriander seeds, angelica seeds, angelica root, liquorice root, orris root, orange and lemon peel, Fuggles hops, dried elderflower and fresh Bramley apples cut into eighths – but there are also a further 37 secret wild botanicals used which are foraged from Chase’s preserved wild river meadow.

The “48” was added to the name in 2016/17 (I think) and has been added to the name as the number recurs in the production of this gin somewhat – 48 traditional and rare cider apple varieties are juiced and fermented to create Willy’s “48” cider, this is distilled in Chase’s great column still with 48 bubble plates, there are 48 botanicals (11 main and 37 wild foraged) and the gin is bottled at 48% abv.
