Ninth Wave Irish Gin 43% is an Irish Gin produced by the newly established Hinch Whiskey Distillery. It is made in the London Dry style.
The Hinch Distillery was founded by well-known Belfast businessman Dr Terry Cross OBE. He is currently building a new distillery and £14 million visitor centre on the Killaney Estate near the town of Ballynahinch, after which the whiskey is named (Baile na hlnse in Irish, means “The Town of the Island”). The distillery is a twenty minute drive from Belfast city centre and was completed 2021. This will not be Cross’s first foray into the drinks business, he also owns and produces wine at Chateau de La Ligne in the Bordeaux region of France.
The Ninth Wave Irish Gin is a fragrant and fresh style. There are nine botanicals which are Juniper Berries, Coriander Seeds, Angelica Root, Oris Root, Cassia Bark, Lemon Verbena, Orange Peel, Cardamon and Grains of Paradise.
Hinch’s meticulous distillation process begins by charging the still with 900 litres of 45% ABV Neutral Grain Spirit. To capture the essence of the botanicals 8 of 9 botanicals are macerated directly in the pot for 12 hours to help release their essential oils, pre-distillation. This direct contact ensures a robust foundation of flavour. Only the lemon verbena is placed in the vapour basket. This allows the vapour to pass through the vapour basket which will lift a delicate profile from the lemon verbena. The vapour basket ensures only the desirable flavours carry across into our spirit from the fine cut verbena.
After 12 hours of maceration, the still is brought up to a rolling boil, the hearts cut is determined by nosing the spirit to ensure only the highest quality spirit makes the cut. The heads and tails of the spirit is collected and recycled. Finally, the gin is let down to 43% ABV using water sourced from the Silent Valley Reservoir in the Mourne Mountains.
The gin is named after the “Ninth Wave”, the barrier that separates the Earthly world from the otherworld in Celtic mythology. It is presented in a funky ocean blue bottle adorned with the Celtic Triskellion, a symbol of the mythical and magical connection between the Irish and the sea.
Hinch remains true to their roots and ocean inspiration focusing on sustainability, ocean cleanups, and marine wildlife initiatives. As an environmentally conscious brand, they work with organisations to preserve the beauty of the seas and contribute to global efforts to protect marine life.
This London Dry style of gin has aromas of pithy citrus, spice nose with nettles, pine needles, and fresh mint. On the palate honey and key lime pie, are smooth and extremely well-balanced.
