Janot Pastis is a classic French Pastis from the Provence region. It is made by Pastis Janot who were founded by Alfred Maunier in 1928. He began crafting traditional Provencal spirit and liqueur, amongst other drinks, with the intention of capturing and passing on the fragrances and flavours of Provence in his rich and aromatic drinks. Unlike other Pastis, at Janot the essential flavours are extracted by maceration in alcohol and not distillation, this helps to impart both natrual colour and flavours. This specially adapted maceration process allowed the plants to slowly release their quintessential aromas. The secret recipes have been passed on through the generations, tested over time and patiently improved. When Janot’s master blender considers absorption of flavour to be just right, the infused spirit is drawn off, filtered and bottled. It is this rather fragile balance between intensity of aroma and subtleness of flavour that gives Janot its distinct, rich taste. Although the blend of herbs and spices used in creating Janot Pastis is, of course, a top secret, closely-guarded recipe it includes star anise and green anise (giving the essential powerful liquorice and aniseed flavours), cloves, tonka beans, cardamom, cinnamon and black and white peppercorns.
