The Foursquare Distillery, which is owned by the Seale family, occupies the site of a former sugar factory that dates back to 1636 and, as one of the most modern (it was opened in 1996) and efficient rum distilleries in the world. It is designed to be both highly energy efficient and environmentally friendly. Martin Doorly & Co was one of the old Bridgetown rum bottling companies (founded in the 1920s) which eventually evolved into Doorly’s Macaw Rum, the first bottled rum exported from the island. The Doorly’s Rum brand was acquired by R L Seale in 1993. R L Seale is one of Barbados’ oldest trading houses, a family-owned business whose involvement in rum-making extends from father-to-son since 1820. Current head distiller, Richard Seale, is one of the region’s most innovative distillers and blenders and has a passion for producing perfect rum with great flavour. Doorlys XO Rum is a blend of pot and column still rums aged for 5 years in ex-Bourbon casks followed by up to three years in ex Oloroso Sherry Oak Casks – this produces a fantastic fusion of old rum character and complex raisin character from the sherry casks. Since 2021 the XO has been bottled at 43% ABV (it was previously 40%), a welcome improvement, and an ABV more commonly used in the Caribbean. This was the first commercially blended rum to be released by Richard Seale. He is very keen that this is not simply finished in Oloroso casks, but this is a “dual maturation”.
This is part of Doorlys Macaw range of rums and the label features the now increasingly endangered Hyacinth Macaw, Anodorhynchus hyacinthinus, the largest flying parrot.
Nose: A heady combination of jammy-juicy sultanas, ripe banana, dried pineapple, ripe plums mango, and cherries. Hints of butterscotch.
Palate: Ripe summer fruitiness, and sweet caramel onto the palate. Hints of orange peel and clementines.
Finish: A long finish filled with gentle notes of fresh ginger, delicate cinnamon, white pepper, and dried hazelnuts.
