Glenmorangie Signet is an entirely different direction for Glenmorangie and is the richest Scotch Whisky in their range. The idea or Glenmorangie Signet came from the Head of Distilling and Whiskey Creation at Glenmorangie, Dr. Bill Lumsden, about 20 years ago. Whilst studing brewing and distillation Lumsden began thinking about the possibilty of using malted barley varieties more commonly used in beer production to make a whisky. The malted barleys are roasted and are therefore more caramelised than standard barley, it is these roasted barleys that give stout, brown ales and porters their colour and flavour. The heavily roasted barley is known as “chocolate malt” due to its dark colour. Whisky made from this chocolate malt is matured in a combination of made-to-order “designer” casks including Sherry cask and new charred oak (the first batch was around 10 year old). This is then blended with other Glenmorangie whiskies some of which are up to 35 years old. It is bottled non chill-filtered at a strenght of 46%. Due to the use of the heavily roasted chocolate malt and the (secret) combination of artisan casks Glenmorangie Signet is a unique and innovative whisky.
