Gonzalez Byass La Copa Vermouth Rojo is a red vermouth made by world famous Sherry producer Gonzales Byass. It was launched in June 2016 but is actually a recreation of a vermouth recipe from the 19th century. The Gonzales Byass philosophy is to maintain, preserve and recover traditional techniques in all aspects of wine and Sherry production – the recipe and techniques for making this Sherry vermouth, for example, date back to 1896. The label itself is a based on the original label in the company’s historical archives.
Gonzalez Byass La Copa Vermouth Rojo is made from a blend of 8-year old Oloroso and Pedro Ximénez (PX) Sherries sourced from well established soleras at from the Gonzales Byass’ old cellars in Jerez. The aromatic and rich Oloroso and sweet and rich PX Sherries are then left to macerate with a selection of the finest and most aromatic spices and botanicals including wormwood, savoury, cinnamon, clove, orange peel, nutmeg, angelica, cinchona bark and quinine. The exact blend of botanicals is, of course, a closely guarded secret, kept under lock and key in the winery. The result is a unique wine with all the flavours and aromas of a classic Vermouth but with the delicious undertones of sweet Oloroso and Pedro Ximénez sherries. This is a captivating mix of new and old.
The name La Copa derives from the name of the iron used to mark the Marquis of Torresoto’s cattle and elegant three-blood (Anglo-Hispano-Arab) horses. The Marquis was the son of the bodega’s founder Manuel Maria González.
