Clonakilty Distillery: The Atlantic Distillery

The Clonakilty Distillery is located in West Cork, on Ireland’s southwest coast, near the Atlantic Ocean. This proximity imparts a unique maritime character to the ageing whiskies.

The distillery was founded by Michael Scully, whose family has farmed the same land for nine consecutive generations. He believed the best Irish whiskey could be improved and set out to produce the finest spirit possible. This process begins with carefully selecting a heritage strain of barley, grown on their farm where the salty air infuses every grain. They also drilled their own well into the local rock to access the purest, cleanest spring water. This is a true “grain-to-glass” Irish Whiskey distillery.

The Clonakilty Distillery produces a wide range of whiskies including blended, grain, single pot still and malt whiskey. They are also well-known for using various different casks for finishing their whiskies including Port wine, Ale, Stout and Bordeaux wine. They have made a number of collaborative whiskies, particularly with breweries in the USA and Ireland. They also produce a Vodka and a Gin.

In the Distillery

  • Clonakilty handcrafted Irish whiskey is made from both malted and unmalted barley, sourced from the family farm or grown by local farmers.
  • A long fermentation period, exceeding 100 hours, allows indigenous yeasts to fully develop a complex array of natural flavours.
  • The whiskey is triple-distilled in long-necked pot stills, producing a lighter, sweeter spirit that is smooth and refined.
  • The eau de vie is diluted with pure spring water from Clonakilty’s own well.
  • The spirit is then aged in oak barrels in a warehouse overlooking the Atlantic Ocean.

Why is it called Galley Head?

The Galley Head whiskies are the entry point into their excellent range of Irish Whiskey. The range is named named after the Galley Head Lighthouse, a bright, white lighthouse situated at the southernmost point of Dundeady Island close to the market town of Clonakilty. When it was built in 1875, it was the most powerful lighthouse light in the world.

 

Tasting Notes

The Clonakilty Galley Head Irish Whiskey delivers a vibrant burst of sweet, tropical notes, in part derived from the maturation in ex-bourbon barrels and former Rhum Agricole casks, Enticing aromas of juicy tropical fruits and warm apple crumble unfold into a rich palate of spiced honey, creamy vanilla, and hints of clove, culminating in a zesty, citrus-spiced finish.

To Serve

Serve neat, at room temperature, or with a large ice cube to chill but avoid too much dilution. Use a whisky tumbler or a Glencairn tasting glass.

Alternatively, mix into a refreshing Irish Whiskey Highball with soda and a pineapple wedge or a Rhum Cask Old Fashioned to complement its sweet, oak-driven flavours.
