Blue Spot Single Pot Still Irish Whiskey is aged for a minimum of 7 years in a combination of ex Bourbon casks, Sherry butts and Portuguese Madeira casks. It is then bottled at a cask strength of 58.4% ABV. As well as Blue Spot, Green Spot and Yellow Spot whiskies are also available to buy at Fareham Wine Cellar.

Blue Spot Single Pot Still Irish Whiskey is a collaboration between Mitchell & Son and Irish Distillers (Jameson’s, Power’s et al.), the powerhouse behind production at Midleton Distillery in County Cork. Together, they blend heritage and expertise to produce a whiskey celebrated for its craftsmanship and character.

History of Mitchell & Son and the Spot Whiskey Tradition

Mitchell & Son was established in 1805 at 10 Grafton Street, Dublin and began their life as a confectionery, wine, and fortified wine business. The company, founded by the Mitchell family, expanded into the Irish whiskey trade, which was experiencing rapid growth in Dublin during the 19th century.

Creation of “Spot Whiskey”

Their approach to whiskey ageing led to the creation of the iconic “Spot Whiskey” range, a tradition that continues to this day. The family developed the “spot” system for tracking the ageing of their whiskey casks in their cellars at Grafton Street, where they would mark the casks with different coloured paint spots to indicate the intended maturation period:

  • Blue Spot: 7 years, reintroduced in 2020 after a 56-year hiatus.
  • Green Spot: No age statement, typically 7–10 years.
  • Yellow Spot: 12 years.
  • Gold Spot: 13 years.
  • Red Spot: 15 years.

Blue Spot Single Pot Still Irish Whiskey Cask Strength Profile

    • Mash Bill: Malted and unmalted barley for a creamy, spicy texture.
    • Distillation: Triple-distilled in copper pot stills at Midleton for smoothness and richness.
    • Maturation: Aged 7+ years in:
      • Bourbon Barrels: Vanilla, caramel, sweet oak.
      • Sherry Butts: Dried fruit, nuts, warm spice.
      • Madeira Casks: Tropical fruit, toffee notes.
    • Bottling: Non-chill filtered at 58.4% ABV for bold intensity.

Tasting Notes

Nose: A light mix of pineapple, kiwi, green banana and lime zest, followed by Pot Still spices, baked apple, hazelnut and toasted wood.

Taste: A smooth mouthfeel with a subtle mix of fruit, a hint of clove oil and cracked black pepper corns. Sweet spices, vanilla and cinnamon add to the wood’s nutty contribution.

Finish: A lasting and distinctly palatable balance of exotic fruits and spices.

To Serve

Drink neat, or with a drop of water to open up the nose aromas and flavours.

Try with dark chocolate, mature cheddar or cold, smoked meats.
