Hattingley Valley Entice is a luscious dessert wine crafted in the heart of the Hampshire countryside and is one of the most original expressions of modern English winemaking. Inspired by the legendary Eisweins of Germany and Austria and the Icewines of Canada, Hattingley has developed its own distinctive approach: pressing beautifully frozen Bacchus grapes, known at the estate as “Crystalline”, to extract only the intensely concentrated, sweet juice, leaving the ice behind in the press.
The result is an English dessert wine that is intensely aromatic, golden, sweet wine bursting with rich tropical fruit notes, elegant floral aromatics, and a vibrant natural acidity that ensures a crisp, remarkably refreshing finish. Beautifully balanced and deeply decadent, it is the ultimate luxury after-dinner treat.
100% Bacchus grapes are harvested from a vineyard close to the winery.
The first Hattingley Entice was created as a trial batch in 2011 after the assistant winemaker Jacob Leadley (now owner at another Hampshire winery, Black Chalk Wine) discovered the method being used on an educational trip to New Zealand. At Fareham Wine Cellar, we have previously sold sweet wines made using similar methods in Portugal and China.
Hattingley Valley Wines is one of the best-known and most-awarded Hampshire sparkling wine producers, with over 230 medals, 16 trophies, and some other very special accolades. It is owned by founder Simon Robinson, a Hampshire resident and former senior partner at City law firm Slaughter and May, who established the estate in 2008 as a farm diversification project.
The first vineyard, named Chalky Hill, was planted in 2008, and the first grapes were vinified in 2010. The sparkling wines are all made using the traditional method, and the first sparkling wine, released in 2013, won a gold medal at the Decanter World Wine Awards.
The winery is located at Lower Wield, near Alresford, and was created under the guidance of then head winemaker Emma Rice, who ensured that Simon Robinson spared no expense in equipping it with the very best modern equipment. The result is an advanced 500-tonne eco-friendly winery used not only for Hattingley’s own wines but also for contract winemaking for many of Hampshire’s smaller producers. They have developed a strong export market with over a third of their wines now going overseas to 16 markets. US, Norway, Australia and Japan are important markets.
The most recent chapter at Hattingley began in 2022 with the arrival of new winemaker Rob MacCulloch MW, who, after gaining experience in Australia’s Margaret River, Germany’s Mosel Valley, and New Zealand’s Hawke’s Bay, finally returned home to Hampshire.
The Hattingley Valley label features a Silver-Washed Fritillary, Argynnis paphia – a rare butterfly found along the several miles of hedgerows and vineyard borders surrounding the estate.
