Turkey Flat Pedro Ximenez is a liqueur wine made in the same way as its long lost cousins, the slightly more famous Pedro Ximenez Sherry wines from Jerez in Spain. This Pedro Ximenez is fortified and then aged in a Solera System.
Turkey Flat Vineyards are located at Tanunda Creek in the heart of the Barossa Valley and are named after the flocks of wild bush turkeys (actually Plains Bustards) that used to roam the area. The winery was founded in 1990 by the Schulz family who built a winery and cellar door at Bethany in Barossa. However, the family had actually owned vines, as well as a thriving butcher business, in the Barossa dating as far back as 1865. There were, however, Shiraz vines planted at Turkey Flat by Johann Fiedler in 1847. Fiedler was one of the first Prussian Lutherans to make wine in the Barossa and was noted for his early efforts to experiment with grape varietals in the region.
Today, the five vineyards that comprise Turkey Flat are currently owned and managed by the fourth generation Christie Schulz. Extensive viticultural research has been undertaken in the vineyards, allowing Christie and her team to sensitively blend traditional Rhone grape varieties with the 1847 Shiraz vines some of the oldest in Australia.
The grapes for the Turkey Flat Pedro Ximenez are grown specifically for Turkey Flat Vineyards by a number of traditional Barossa grape growers.. The grapes are always left to the last minute for harvest so that they are very ripe and sweet (and potentially raisined, if left long enough). After harvest the grapes are crushed and allowed to macerate for 4 days. The juice is then fortified with grape brandy spirit (a neutral, unaged spirit) and matured in a combination of French oak hogsheads and vats. The solera was created in 1997 and the resulting wine has an average age of around 7 years old. The result is a sticky, sweet dessert wine that is a bit lighter in style to PX Sherry. Careful consideration is given to creating nutty characters with a background of freshness.
Turkey Flat Pedro Ximenez is a dark red, brown rusty colour. The nose has aromas of orange citrus, marmalade, dried fruit, coffee, figs, raisins and and spices. The palate has flavours of marmalade, apricot, figgy, confit fruits and spicy / oaky rancio notes. it is full, luscious and intense, sweet yet clean, fresh and not cloying with a good lingering finish.
Turkey Flat Pedro Ximenez can be served with savoury foods such as patés, blue cheese or charcuterie but will also work as a dessert wine with chocolate desserts, sticky toffee pudding or Christmas pudding.
