Grant Burge The Holy Trinity is modelled on a Rhone style blend which is ideal for the climate conditions and winemaking techniques of the Barossa Valley The fruit for this wine is 100% Barossa, handpicked from old, dry grown bush vines. The youngest of these vines is at least 50 years old, while the oldest is well over 110 years old. The varieties are fairly evenly proportioned for this vintage with 38% Grenache, 36 % Shiraz and 26% Mourvedre. Parcels of grapes are vinified separately and allowed to rest in oak barrels. The wines are then assembled in a combination of of seasoned larger format Foudre vats (2500 ltr) along with French oak Puncheons (500 litre) where the wine is aged for 18 months prior to release.
