Bodegas Baron Manzanilla Pasada En Rama Xixarito is produced in the port town of Sanlucar de Barrameda. It is technically a Fino Sherry but Fino from the town Sanlucar de Barrameda is known as Manzanilla Sherry.
Bodegas Barón is a traditional family owned company with nearly 400 years of trading history. Company records date back to the seventeenth century and 1630 when the Romero Balsa Family founded the company. They are thought to be the oldest Sherry producer in Sanlucar de Barrameda. Most recently in 1984 the Bodegas were acquired by businessman Don José Rodríguez Jiménez – his sons Don José Rodríguez Carrasco and Don Juan Luís Rodríguez Carrasco have run the winery since 2011. As well as Manzanilla the company produces Sherry, Jerez Vinegar and Brandy de Jerez.
Bodegas Baron Manzanilla Pasada En Rama Xixarito is made from 100% Palomino grapes. Manzanilla is often described as having a salty tang due to the barrels ageing warehouses close to the Guadalquivir estuary. The cooler temperatures and high humidity here also means that there is a thicker cap of Flor (the layer of yeast over the top of the Sherry) which means the wine is fresher and more delicate than other Finos.
A Manzanilla Pasada is an aged Manzanilla. It is a richer, older Manzanilla in which the flor starts to fade (usually around 6 to 7 years). En Rama can perhaps best be described as a “raw Sherry”, straight from the barrel (however it normally undergoes a light filtration). En Rama Sherries, being as natural as possible, are said to be much more flavoursome and complex than others.
Drink as an aperitif or with tapas. It is also great with Mojama (salt-cured tuna), anchovies in vinegar, cold soups, cured meats and sushi.
Bodegas Baron Manzanilla Pasada En Rama Xixarito is a pale yellow in colour, this Manzanilla has an intense nose with woody notes, a touch of faded flowers and hints of nuts. On the palate, it is fleshy, very dry but with enough weight & texture and an excellent acidity that culminates in a slightly salty finish.
