Description

Cavicchioli Lambrusco Rosso dell’Emilia IGT Secco, if one deciphers the name, is a dry, red sparkling (vino frizzante) wine from the region of Emilia Romagna located in the north of Italy. Lambrusco is both the name of a red wine grape and the wine made primarily from this grape. There are various varieties of Lambrusco including Lambrusco Grasparossa, Lambrusco Maestri, Lambrusco Marani, Lambrusco Montericco, Lambrusco Salamino, and Lambrusco Sorbara. These are generally blended with upto 15% of other varieties for colour, flavour etc. Founded in 1928 by Umberto Cavicchioli in the village of San Prosper, near Modena, Cavicchioli is one of the most famous, high-quality Lambrusco producers. Today they have over 90 hectares of vineyards in the Sorbara and neighbouring area, as well as the DOC area between the Secchia and Panaro rivers. The cellars remain in San Prospero. Cavicchioli Lambrusco Rosso dell’Emilia IGT Secco is made from Lambrusco grapes from Emilia and that is the most I can find out on that front! The grapes are grown on high-trellised vines on mixed soil in the area situated between the central plain and the low hills of the province of Reggio Emilia and the province of Modena. After harvest and controlled alcholic fermentation stainless steel, the wine then undergoes a secondary fermentation, in tank, using the Charmat method, for 7-10 days at a controlled temperature of 12-14°C. This is a light, refreshing and fragrant Lambrusco, if you remember Lambrusco from the bad old days, it is probably time you rediscovered it!
