Peller Estates Ice Cuvee Sparkling wine is made from hand-picked Chardonnay and Pinot Noir grapes. It is made in the traditional method.
Peller Estates and the Peller family have been making wine in Niagara Peninsula for 3 generations, and are widely regarded as one of the highest quality and most innovative producers of Canadian Icewine. They also make very good still and sparkling wines too. The sparkling wines are made using the traditional “méthode” and they are bottled Niagara Peninsula VQA. VQA stands for Vintners Quality Alliance and is the Canadian equivalent of the French AOC or Spanish DO and guarantees the high quality and authenticity of origin for Canadian wines made under that system in British Columbia and Ontario. The Peller Estates winemaker is Katie Dickinson who began her wine making career at Peller 2006. Katie left Peller to travel and make vintages around the world, including New Zealand and France, before returning to Peller as winemaker in 2012.
For the Peller Estates Ice Cuvee, individual batches of Chardonnay and Pinot Noir are fermented in tank. A cuvee is made using a selection of these wines which are then bottled with yeast and sugar. After ageing on the lees for approximately 30 months, the bottles are riddled, degorged and a dosage of Icewine (110ml) is added. Enhanced by the burst of flavour from the Peller Vidal Icewine, a sparkling wine of unique style and finesse is created.
Peller Ice Cuvee is suitable for vegans and vegetarians.
Peller Estates Ice Cuvee Sparkling NV Methode Classique has very fine bubbles spiral and is a brilliant yellow straw colour. The nose has fantastic aromas of apricot, yeast and ripe apple, with hints of honey. These are followed by tropical fruits on the palate and a refreshing sweet grapefruit finish.
Enjoy before a meal with salty appetizers, seafood or creamy risotto or with fresh fruit and creamy cheeses. It also works well with spicy Asian dishes or Indian curries.
