Bischofliche Weinguter Trier Ayler Kupp Riesling Spatlese Feinherb is a delicious medium-dry Riesling from the Mosel. The wine showcases the unique terroir of the Mosel region and offers a delightful balance of sweetness and acidity. The wine takes it name from the top of the hill, which is said to resemble a whale, on which the vineyards are located.
The wine estate of Bischofliche Weinguter Trier was founded in 1966 with the amalgamation of three wine estates – Bischöfliches Konvikt (est. in 1840), Bischöfliches Priesterseminar (est. in 1773), and Hohe Domkirche (est. in 1851). Today, the estate comprises some 130 hectares of vineyards spread over 145 plots and 35 singel vineyard sites which are located at some of the most legendary sites in the Mosel, Saar and Ruwer. The estate has implemented and maintains an integrated management system for quality, environmental, occupational, health and safety, and food safety that is certified by EcoStep. The company acquired Friedrich Wilhelm Gymnasium in 2003.
Almost 90% of production is Riesling (they also produce some Pinot Gris and Pinot Noir), with grapes crushed and pressed at Scharzhof on the Saar and Duisburger Hoffman on the Ruwer. Wines are then aged in either traditional fuder or stainless steel in their vast vaulted cellars in the heart of Trier, which date back to Roman times and cover some 30,000 square meters..
Ayler Kupp is considered one of the top vineyard sites in the Mosel and is known for producing exceptional Riesling wines. It is located in the Saar Bereich (district) of the Mosel wine region. The 100% Riesling grapes for Bischofliche Weinguter Trier Ayler Kupp Riesling Spatlese Feinherb are grown on Devon slate soils. After careful picking and selection the grapes are fermented in 1000L oak Fuder and stainless steel tanks, both blended later to add complexity. The wine rests for a few months on its fine lees before bottling.
