Description

Novas Gran Reserva Chardonnay is a white wine made from organically grown grapes from the Casablanca Valley.

In the late 1990s Rafael and José Guilisasti had the foresight to see how popular and important organic and sustainable viticulture would become. They enlisted the help of winemaking consultant Alvaro Espinoza to convert their exisiting wine over to 100% organic and biodynamic. More than a decade later major national and international awards are a testament to the quality of their wines. Emiliana has vineyards in Maipo, Casablanca, Rapel, Colchagua and Bio-Bio. José Guilisasti also runs one of Chile’s foremost nurseries so they have access to the newest and best clones in Chile. Emiliana is also Chile’s largest organic producer with 250 hectares of vineyards IMO and Demeter certified and an additional 250 hectares in conversion.

The grapes for the Novas Gran Reserva Chardonnay are sourced from drip irrigated vineyards, with a NE / SW aspect at an altitude of 370m. The grapes are harvested by hand into 12kg boxes and are sorted att he winery prior to a gentle pressing. The juice is fermented in stainless steel vats. The wine is aged on its lees with battonage to increase creaminess and complexity in the wine. The wine does not undergo malolactic fermentation and 30% of the wine is aged for 4 months in French oak barrels.
