Foursquare 11 Year Old Zinfandel Cask Blend Rum is a limited release Bajan Rum. It is produced at the Foursquare Distillery which is owned by R L Seale, one of Barbados’ oldest rum companies. The Foursquare Distillery, located in St Philip, occupies the site of a former sugar factory that dates back to 1636 and, as one of the most modern and efficient rum distilleries in the world, is designed to be both highly energy efficient and environmentally friendly. Foursquare rum is made from locally owned and sourced sugar cane converted to molasses, fermented very slowly over 44 hours with South African yeast and then distilled. Richard Seale, is one of the region’s most innovative distillers and blenders and has a passion for producing perfect rum with great flavour. Richard is at the forefront trying to educate rum drinkers about additives (colourings for example) and for greater transparency in labelling.

Foursquare 11 Year Old Zinfandel Cask Finish Rum (Mark IV in the “Exceptional Cask Selection” series) is a result of Richard Seale’s experimentation with different cask finishes for his rums. He has previously successfully used ex-Sherry cask for the Doorlys XO Rum and in 2015 released a Port Finish Rum. Different cask finishes are something that the whisky trade has been using to great effect for many years, so why not rum? The rum is a blend of artisanal pot still and twin column continuous still rums. The pot still rum brings complexity and flavour whilst the column still rum add balance and aroma.

There are two components to Foursquare 11 Year Old Zinfandel Cask Rum, a pot /column blend that has been aged 11 years in American oak and a pot /column blend that has been aged for 5 years in American oak followed by 6 years in Californian ex- Zinfandel. These two are blended to make the final product. Bottled as a pure rum, no sweeteners or other flavourings added. Bottled at 43% in September 2015.
