Winchester Distillery White Rum is a molasses based white rum sustainably produced by the Winchester Distillery. The distillery also produces a golden rum.
Winchester Distillery is a small, artisanal spirits producer located in the South Downs National Park, just outside of Winchester, England. The distillery was founded by ex software developer Paul Bowler, in 2014, who started out with a small 25 litre still in his garage. The company specialises in produciing high quality spirits using traditional methods, modern energy-saving equipment and using botanicals sourced from the local Hampshire surrounds. The first product launched was Twisted Nose Gin, a gin with Hampshire watercress as one of the botanicals. Today the distillery’s portfoilio has grown to including several other gins including a Navy Strength and the Round Table Gin.
Paul had never been impressed by with rum production methods in the UK and set out to produce rums made to their own, exacting, high production standards. The first rums, and an apple brandy, were launched in summer 2023. Many commercial UK rums are made by blending imported rums from around the world. However; Winchester Distillery Golden Rum is made from scratch in the UK. The rum begins life by “mashing” a high-grade sugarcane molasses (a plentiful by-product of the sugar production). Mashing means that the the molasses undergoes a slow, low temperature fermentation using the distillery’s own mix of carefully selected suitable yeast strains, these bring their own particular naunces, aromas and flavouurs to the end spirit. The resulting liquid is a beer-like alcoholic liquid; it is this which is then distilled to produce the spirit destined to become rum.
For the Winchester Distillery White Rum, the fermented mash is distilled in a column still, which produces lighter, pure and softer spirit compared to that produced in a pot still. The spirit comes of the column still at 94% ABV. It is then let down to 40% and left to rest aged in stainless steel tanks for several weeks to allow any harsher, volatile flavours to evaporate.
Bottled at 40% ABV without and colouring or sweetening added.
