Winchester Distillery Golden Rum is a molasses-based golden rum sustainably produced by the Winchester Distillery and is one of the rums available at Fareham Wine Cellar. The distillery also produces a white rum. Winchester Distillery is a small, artisanal spirits producer located in the South Downs National Park, just outside of Winchester, England. The distillery was founded by ex software developer Paul Bowler, in 2014, who started with a small 25 litre still in his garage.
The company specialises in producing high-quality spirits using traditional methods, modern energy-saving equipment and botanicals sourced from the local Hampshire surroundings. The first product launched was Twisted Nose Gin, a gin with Hampshire watercress as one of the botanicals. Today, the distillery’s portfolio has grown to include several other gins, including a Navy Strength and the Round Table Gin.
Paul had never been impressed by rum production methods in the UK and set out to produce rums made to their own, exacting, high production standards. The first rum and an apple brandy were launched in the summer of 2023. Many commercial UK rums are made by blending imported rums from around the world. However, Winchester Distillery Golden Rum is made from scratch in the UK.
The rum begins life by “mashing” a high-grade sugarcane molasses (a plentiful by-product of sugar production). Mashing means that the molasses undergoes a slow, low-temperature fermentation using the distillery’s own mix of carefully selected suitable yeast strains, which bring their own particular nuances, aromas and flavours to the end spirit. The resulting liquid is a beer-like alcoholic liquid; it is this which is then distilled to produce the spirit destined to become rum. For the Winchester Distillery Golden Rum, the fermented mash is distilled in a pot still, which produces a more flavoursome spirit than one distilled in a column still.
The colourless, clear spirit comes off the still at 85% ABV. This richer style of base is a perfect base spirit for barrel ageing. It is aged in virgin English oak casks for 6 months, which helps to produce a full, rich, complex flavour profile and golden colour. The barrels are sourced from sustainable forests in the north of England to Winchester Distillery’s own specification.
Bottled at 40% ABV without any colouring or sweetening added, this is a distinctive English rum available at Fareham Wine Cellar.
