Mossburn Speyside 12 Year Old Blended Malt Dupont Calvados Cask is the second release in the Mossburn Cask Collaboration series made in conjunction with Calvados Dupont. Mossburn’s Cask Collaboration Series will see Mossburn blend and finish a different Scotch each year in special casks sourced from a distinctive, world-renowned distillery across different spirit categories. The first release was a collaboration with Foursquare Rum Distillery.

Mossburn Distillers & Blenders is a Scotch whisky project owned by Marussia Beverages. The company is headquartered at Jedburgh in the Scottish Borders on the site of the former Jedforest Hotel and is one of the first new distilleries to be built in the Borders for over 180 years. The first phase of development is the construction of the Jedhart Distillery, a small distillery featuring three copper stills, five 5,000 square meter warehouses for pallets and casks and a small café. The second phase is the construction of the Mossburn Distillery and visitor centre, a large production facility with the capacity to produce 25 million litres of spirit per year. There will also be a larger café and restaurant. Not content with these distilleries, the parent company of Mossburn is also the owner of Torabhaig Distillery on the Isle of Skye. Whilst all these projects come to fruition, Mossburn has been releasing a number of Vintage Cask and Single Cask bottlings as well as Caisteal Chamuis.

This release is made using casks from Calvados Dupont from the Pays d’Auge in Normandy. Dupont was established in the late 1800s as a farm and cider house before a focus on Calvados began in the 1980s. The Pays d’Auge region has become known for the extra finesse and delicacy of the Calvados partly because it only permits the use of apples and insists on double pot distillation.

Mossburn Speyside 12 Year Old Blended Malt Dupont Calvados Cask combines a blend of four carefully selected Speyside whiskies initially aged for 12 years in refill American oak hogsheads. These are then married together and re-aged in French oak barrels that previously held Calvados and Pommeau.

Neil Macleod Mathieson, whisky maker at Mossburn Distillers, commented: “When looking at collaborative efforts, one likes to turn to one’s oldest friends. Having worked with the Dupont family for 30 years and admired the deft touch with which they introduce oak to their Calvados, I was sure this would allow us to use their locally coopered casks to great effect on a Speyside malt finish, emphasising its typical heathery and floral notes. Even before casking, we were imagining autumn days and spiced baked apples – what a treat.”

Mossburn Speyside 12 Year Old Blended Malt Dupont Calvados Cask is bottled from 18 hand-picked casks without colouring and non-chill filtered at a batch strength of 57.2% ABV.

Limited to 1400 bottles for the UK.

 

Tasting Notes

Nose: Honeyed florality with baked red apples, complemented by vanilla cream, pink peppercorn, and a hint of oaky spice in the background.

Taste: Light, well-rounded and initially delicate on the palate, with more weight and a touch of fire developing. Subtle sweetness from the casks enhances the heathery cereal notes, matching the light ginger and oak spice.

Finish: Complex, with notes of apple crumble, toasted hazel notes, sultanas and toffee brittle.
