Jacobs Creek Johann Shiraz / Cabernet Sauvignon is the flagship of the Jacobs Creek range and is a blend based around Barossa Shiraz that is sourced in part from renowned vineyards on the banks of Jacobs Creek. The structure and elegance of the Jacobs Creek Johann Shiraz / Cabernet Sauvignon is achieved by carefully marrying Shiraz with selected parcels of Cabernet Sauvignon, each fermented separately to give greater complexity to the blend. The parcels of grapes are de-stemmed and crushed separately to small, static fermenters. The fermenting musts in are pumped over regularly to ensure thorough, yet gentle, extraction of tannins from the skins. A portion of the Cabernet Sauvignon is left on the skins for several days for an extra period of maceration to provide fine tannin structure. After the ferments are pressed, the Shiraz wines are aged in selected French and American oak hogsheads whilst the Cabernet Sauvignon wines are aged in new French oak hogsheads. The wine undergoes malolactic fermentation in the the barrels and are then aged for around 18 months prior to final selection, blending and bottling.
