Novas Gran Reserva Carmenere / Cabernet Sauvignon is a red wine sourced from organically grown grapes from the Colchagua Valley.
Vinedos Emiliana was founded in the late 1990s by Rafael and José Guilisasti who had the foresight to see how popular and important organic and sustainable viticulture would become. They enlisted the help of winemaking consultant Alvaro Espinoza to convert their existing wine production over to 100% organic and biodynamic. More than a decade later major national and international awards are a testament to the quality of their wines. Today Vinedos Emiliana has vineyards in Limari, Casablanca, Colchagua, Cachapoal, Maipo and Bio-Bio. Until his death in 2014 José Guilisasti ran one of Chile’s foremost nurseries so they also have access to the newest and best clones in Chile. They are Chile’s largest organic producer with 250 hectares of vineyards IMO and Demeter certified and an additional 250 hectares in conversion. The wine at Los Robles has the added benefit of being biodynamic and features the sensory delights of roaming Alpacas, dung heaps and dynamised biodynamic mixtures to treat the vineyards.
The grapes for the Novas Gran Reserva Carmenere / Cabernet Sauvignon come from Fundo Los Robles, a vineyard planted on the foothills of a mountainous outcropping in Lo Moscoso. The Colchagua valley stands out for its Mediterranean climate with four well-defined seasons. The summers are hot and dry, which encourages proper ripening without interruptions. The valley ends at the Pacific Ocean, which has a positive effect on the vineyards because it cools the valley during the hot season. The grapes are picked into 400kg bins and are then transferred to the winery where they undergo a double selection process before and after destemming. The grapes undergo 4 or 5 day period of maceration before alcoholic fermentation using 80% native and 20% commercial yeasts at 26º–27ºC with a pumpover program determined the requirements of the vintage. Upon completion, the new wine remained on its skins for an addition 5 days of post-fermentation maceration. Malolactic fermentation took place naturally in stainless steel tanks and barrels, where the wine remained at controlled temperatures for 12 months. The wine was neither fined nor stabilized, and prior to bottling it was filtered through a 1-micron membrane.
Novas Gran Reserva Carmenere / Cabernet Sauvignon is a blend of 85% Carménère and 15% Cabernet Sauvignon was aged for 10 months, 10% in French oak foudres, 40% in stainless steel tanks and 50% in French barrels.
