Domaine Clement Lavallee Saint-Bris Les Copains d’Abord is a white wine produced in the Burgundy wine-growing region of France. Saint-Bris is an oddity in Burgundy; it is the only appellation that allows the use of Sauvignon Blanc (and Sauvignon Gris) rather than Chardonnay. The Saint-Bris AOC was created in 2003, prior to this the wines were labelled under the VDQS status of Sauvignon de Saint-Bris.
Domaine Clement Lavallee is one of the rising stars of Chablis. The estate was founded as recently as 2019 with just 1.9 hectares of vineyards in Chablis. Clement soon acquired a further 5 hectares of vineyards in Saint-Bris and Bourgogne Cotes d’Auxerre. Most recently, when his wine-grower father retired in 2021, he inherited his father’s vineyards bringing the new domaine’s holdings to 14 hectares. His sister Caroline has also joined him at the new domain. As well as a Saint-Bris the estate also produces Bourgogne Aligoté, Irancy, Côtes d’Auxerre Blanc and various wines from Chablis. The winery is located in the commune of Saint-Bris-Le-Vineux.
Lavallee is a low-interventionalist both in the vineyard and the cellar. No chemicals or insecticides are used in the vineyards and treatments are minimal. The estate is working towards full organic certification. Wine-making is as natural as possible using only indigenous yeasts for fermentation, no sulphur is used during pressing and gravity is used for moving the wine. They have a strict press selection and only keep the finest juice, with the remainder being sold off in bulk.
The grapes for the Domaine Clement Lavallee Saint-Bris Les Copains d’Abord come from a 30-35-year-old, one-hectare plateau vineyard planted on clay-silt soil and with a western exposure. After pneumatic pressing, must and gravity settling, and gentle racking at low temperatures, the wine goes through alcoholic and natural malolactic fermentation in neutral oak. The wine is then matured for 11 months on fine lees in 228 and 350L oak barrels. The wine is bottled with light bentonite fining and unfiltered.
