Dom Perignon Rose is considered to be one of the very best pink Champagnes. It is only produced in years that are deemed of good enough quality to produce a wine that can live up to the exacting standards it takes to wear the Dom Perignon label.
Dom Perignon is one of the most famous and prestigious Champagnes and is Champagne Moet et Chandon’s prestige Champagne. It is named after the French Benedictine monk Dom Perignon (1638-1715) who dedicated his life to studying wine-making techniques including blending of grapes to improve quality and the development of sparkling wines. The very first vintage of Dom Perignon was produced as early as the 1920s and 1930s but what we know know as Dom Perignon was not made commercially available until 1943 when Moet et Chandon Vintage Champagne was given an extra period of maceration and transferred to the famous 18th century-style bottles, similar to the ones used today. From then on Dom Perignon was always made separately and to a higher quality than Moet’s “normal” vintage.
True to the ambition of Dom Pérignon in the late 17th century, the Chef de Cave demands the exceptional: only an outstanding harvest is worthy of Dom Pérignon vintage champagne, the exclusive product of a single year. Each new vintage is a unique creative act, reinventing the extraordinary style of a wine that only the Chef de Cave may declare a “vintage year”. “The grapes are never the same from one year to the next. If a harvest does not meet Dom Pérignon’s unyielding standards, there will be no vintage champagne that year.
Dom Perignon Rose is a blend of wine made from Pinot Noir and Chardonnay grapes sourced from the finest grands crus vineyards. These best vineyard sites have the best soils and exposure that enable the grapes to attain their fullest expression. This wine is a tribute to Pinot Noir. All Dom Perignon is made from a blend of Pinot Noir and Chardonnay grapes, however the rose has a third component, a red wine made from Pinot Noir which is used to give the wine its beautiful pink colour. The Pinot Noir grapes mainly come from three villages: Hautvillers, Aÿ and Bouzy. The red wine is blended with the white wines before the Champagne then undergoes its secondary fermentation in the bottle. The Dom Perignon Rose 2005 uses a higher proportion of red wine than some other recent vintages, giving the wine a very vibrant pink colour. Aged for over 10 year before release.

Delicious with seafood such as an elegant langoustine paired with hummus or with a devilled egg, Prunier caviar and raw asparagus salad. Paired with meat, for instance a charred Waygu beef sashimi with chilled spiced turnip greens, Rosé 2005 offers its smoky minerality up front.
From Dom Perignon:
On the nose: Tropical notes of guava and curry leaf melt away into more classical ones of zest and very ripe stone fruit. Cocoa and toasted spices complement the whole.
On the palate: The wine has a bracing vinosity. Its initial richness expands and affirms itself, becoming more physical, powerful and structured. It has remarkable length in the mouth, with a touch of licorice and a backdrop of juicy, bitter blood orange.
