Description

Coteaux Varois AOP

The Coteaux Varois AOP surrounds the city of Bignoles and encompasses some 28 different communes. The soils here are generally clayey–limestone soils, rich in flint stones, and the vineyards benefit from a special microclimate due to their high altitude (the vineyards are located at an average of 350m above sea level).

Domaine St Jean de Villacroze

Selladore en Provence wines are owned by William Chase. He acquired the Domaine St Jean de Villecroze estate in Provence, where Selladore wines are produced, in 2015. The head winemaker is Dale Clarke, who oversees the entire winemaking process, with a focus on organic farming practices

Chase’s vineyards at Domaine St Jean de Villacroze now cover over 27 hectares across the Coteaux Varois en Provence and the Côtes de Provence appellations. In the vineyard, maximum leaf coverage is encouraged to protect the grapes during the growing season. Then, two weeks before harvest, manual leaf plucking is done around the bunches to allow light and air to reach the fruit. This helps with the final ripening of the grapes and prevents rot or mildew, which can be caused by high humidity during cooler nights in the late summer and early autumn.

Selladore En Provence Rosé Winemaking

  • Blend Composition: Selladore En Provence Rosé is made from Grenache, Syrah, Cinsault, and Rolle (Vermentino), adding peachy character.
  • Hand Harvesting: Grapes are hand-picked in the early morning to preserve freshness and maintain optimal acidity.
  • Separate Vinification: Each grape variety is vinified separately for greater control over the final blend.
  • Gentle Processing: Grapes are de-stemmed, gently pressed, and have minimal skin contact, creating the wine’s delicate pink colour.
  • Fermentation: Undergoes temperature-controlled fermentation below 17˚C in stainless steel tanks.
  • Lees Ageing: A portion of the blend is aged on the lees with regular stirring, enhancing creaminess and texture.

Vinolok Closure

It is presented in a smart, elegant bottle. One item of note is the closure. Selladore En Provence Rosé is sealed with a Vinolok closure. This is a perfect closure for wines designed to be drunk young. Why not re-use the bottle as a water bottle for the dining table or for making sloe gin or salad dressing?

Why Is It Called Selladore En Provence Rose?

The name “Selladore” is a play on the words “Cellar Door”. For those of you into Phonaesthetics, the compound noun cellar door has been widely cited as an example of a word or phrase that is beautiful purely in terms of its sound without inherent regard for its meaning. Something that proprietor William Chase learnt at school and never forgot!

Tasting Notes

Selladore En Provence Rosé is a beautiful pale shade of pink. The wine has a lively nose exuding stone fruit and citrus fruit aromas. An enveloping silky texture on the palate is balanced with refreshing acidity and bone-dry flavours of peaches and grapefruits. It has a long, lingering finish.

Food Pairing

This fantastic Provence rosé should be served chilled, but not too cold.

It is perfect as an aperitif and great with summer salads, cous cous, warm goat’s cheese salad, chicken and grilled fish and seafood dishes.

Our top tip is to try it with cottage pie. It works surprisingly well!
