Zensa Fiano Winemaking

Minimal intervention during winemaking allows the distinctive characteristics of the Fiano grape to shine through:

  • Early Morning Harvest: The grapes are picked during cooler morning hours to ensure they arrive at the winery in peak condition and retain their freshness.
  • Gentle Processing: Once harvested, the fruit is destemmed and gently pressed. The resulting must is then chilled and left to rest for 18 hours.
  • Temperature-Controlled Fermentation: The juice is racked into stainless steel tanks, where it undergoes a cool, steady fermentation at 18°C.
  • Lees Contact: Finally, the wine is left to sit on its lees for approximately one week, a process that helps develop additional complexity and a desirable, creamy texture.

Vineyards

The grapes for the Zensa Fiano are sourced from low-yielding, fully organic vineyards in the Salento region of southern Puglia. The vines are trained in the spurred cordon system and are an average of 10 to 15 years old, with a plant density of approximately 5000 plants per hectare.

What Is Fiano?

Fiano is one of Italy’s oldest and most celebrated white grape varieties, originating in Campania’s Irpinia hills, where it produces the celebrated Fiano di Avellino DOCG. More recently, it has also been found outside Italy, in countries such as Australia and Argentina. It is a grape prized for its naturally aromatic character and ability to retain freshness in warm climates. Fiano produces wines with remarkable balance, combining vibrant fruit with floral aromas and subtle nutty complexity.
